What are the ideal settings to bring the server online? I'm currently using

-Xmx5G

but with few players online (120) and a lot of crashes and lag

NOTE: I'm using active anti-cheat
 
for lag -> try ping the DNSs of your server machine,
find what dns you are connected to and open cmd as admin and type: ping (your dns)
(this also has to do with locations of machine and from where your players loggin in)
e.x. this is google dns:

ping 8.8.8.8

5G is more than enough even for 500 ppl
crashes you mean on client side right? -> use of custom patch? -> maybe this interfere with AAC


Do you have custom patch? What are your server/vps specs ?
as @MrTitan said, what are your machine specs including network specs and physical location of server machine (what country)?

i dealt with a similar "lag" matter some time ago and it had to do with the things i mentioned above.
it had to do with the servers physical location, proxy solved this.
i am not saying you need proxies, but it could be

I don't use custom items, just the ones that already exist on the server. My server has the following settings

RAM
24 GB DDR4
CPU
12 vCore
DRIVE
180 GB SSD

the server is hosted in the country of the target audience, for the lowest latency

My server is located in Brazil, which is the country where the players are, about the custom path I use a customized interface with some modifications, but without many things, already about custom items I have not added any, only the items that already come on the server / client

Do you have a proxy company to recommend?

even if you have or don't have custom items.... actually custom interface is more of a target for aac
it's in the word itself....aac will protect the user/client from installing mods in the interface right?
you can start with this patent option:
try testing with out the interface-try to force crash the game with too much speed or something
see if the crashes continue, i use the same client with interface and aac and the client hardly ever crash
(this regarding the crashes)

if everything is located and intended to log from the same country then,
a proxy would only have meaning to hanlde traffic....120 ppl is not traffic
also the datapack it's self has configs for proxy (forgive me i myself have not yet take a peek in this)

it's not about ram, that about your network, crushes about a game client.
You can check ram and CPU usage by htop if Linux and Task Manager at Windows.
Try to use a clean game client and also trace your or your players connection by ping and etc.

Fast question. Did you tell the Deazer the hosting machine IP so he can put it in your license?
